Ingredients:
6 medium potatoes, cut into small cubes
1 leek, white part only, chopped
1 carrot, chopped
1 zucchini, peeled and chopped
1 celery stalk, chopped
3 cups water
1 cup coconut milk
3 tbsp extra virgin olive oil
salt and black pepper, to taste
Directions:
Gently heat olive oil in a deep saucepan and sauté the onion for 2-3 minutes. Add in potatoes, carrot, zucchini and celery and cook for 2-3 minutes, stirring.
Add in water and salt and bring to a boil, then lower heat and simmer until the vegetables are tender.
Blend until smooth, add coconut milk, blend some more and serve.
